Takikomi Gohan with Young Ginger: Quick & Healthy Recipe (新生姜炊き込み御飯の作り方)

Takikomi Gohan is a comforting Japanese Mixed Rice which is made using seasonal ingredients. Mushrooms, carrots and bamboo shoots are commonly often used for this dish.

In this recipe, I used young ginger which is available in spring and early fall. Although young ginger has the same health benefits as old ginger does, it is firmer, more fragrant, sweeter and juicer but less pungent comparing to old ginger.

This Takikomi Gohan recipe is quick and easy to prepare. You can easily make it using a rice cooker or in a pot on stove top. Since it's a healthy and quick to make Japanese rice dish, it's perfect for busy weeknight or any day during the week.

If you or someone you are cooking for have gluten allergy, simply substitute soy sauce with gluten free soy sauce or tamari sauce and your gluten free takikomi gohan is done.

How to make cups of uncooked short-grain rice

Dashi

1/3 cup of thinly sliced young ginger

1/3 cup of thinly sliced carrot

1 aburaage

2 dried shiitake mushrooms

2 TBSP of light-colored soy sauce (or gluten-free soy sauce for gluten allergy)

2 TBSP of mirin

2 TBSP of sake
